    Time: Prep time 15 minutes, bake time 55 minutes

    Serves: 1 because it is that delicious, but if you have to share, it makes about 10 slices.

    Ingredients:

    – 4 ripe bananas
    – 1/4 cup coconut oil
    – 1/2 cup oat mil
    – 2 tsp vanilla extract
    – 2 cups plain flour
    – 1tsp cinnamon
    – 1/2 tsp nutmeg
    – 1 tsp baking powder
    – 1/2 tsp kosher salt
    – Oats
    – Coconut Shreds
    – Pepitas

    Method:

    1. Preheat your oven to 180 degrees Celsius and line a loaf pan with baking paper.
    2. Mash your 4 ripe bananas in a bowl.
    3. Melt your coconut oil first before measuring a 1/4 cup.
    4. Mix your mashed banana, coconut oil, oat milk and vanilla extract in a bowl.
    5. Sift your plain flour, cinnamon, nutmeg and baking powder into the wet ingredients and fold in.
    6. Add in your kosher salt. I prefer to use course ground.
    7. Pour your mixture into a pre prepared loaf pan. And sprinkle some oats, pepitas and coconut shreds on top.
    8. Bake for 40 minutes in the oven.
    9. Cover and bake for a further 10 to 15 minutes or until your skewer comes out clean.
    10. Enjoy straight away because who doesn’t love banana bread straight out of the oven?!
